Cardiff, Wales

Cardiff was an underrated tourist destination, and we preferred it this way.  Tourists were at a minimum so the city felt like it was for locals only.

The red dragon was everywhere, even on top of the city hall.  That was so awesome!  Sorry no photo because there was no way I could take a good one.

We went from Bath to Cardiff.  Because of construction, the train went by Swindon.  It took double the time and distance.

Cardiff Castle:  what a dominant presence with a red dragon flag.  I learned so much history here.  When we were there, they were setting up a music festival. How cool was that, attending a music festival inside a medieval castle.

We really liked the shopping arcades.  That was smart city planning.  It was raining when we were in Cardiff; we were able to run from arcades to arcades without getting too wet.

National Museum Cardiff:  what a great museum. Nobody was here!  Dinosaurs, Rodin, Monet, Picasso, oh my!  Beautiful inside and out.  And FREE!

The Roman Baths, Bath

I couldn't say enough good things about Bath.  The Roman Baths was wonderful; I learned so much history. I imagined myself as a Roman high class lady coming to Bath for a spa vacation!

The city was beautiful.  The food was good.  Tourists stayed mostly for the Roman Bath, then left right afterwards.  So the streets were quiet.

Windsor Castle

Windsor Castle was beautiful.  The town was cute, too.  It was a short distance from London.  We went with a tour group, which was not good.  The tour gave us only one hour inside.  That was not enough time to see everything.  So we ended up not going inside any exhibit.  Lesson learned.  If we ever go back, we will spend a whole day and night there.

The Sherlock Holmes Museum

The Sherlock Holmes Museum was unexpectedly wonderful.  I wasn't thinking much because it was a museum based on a fictional character; how real could it be?  It turned out, it was quite fun.  They actually put real Victorian furniture and arranged the whole house as Victorian style.  Therefore, even though the characters were fake, the history was real.  If this would attract more people to learn about history, I was all for it.

We didn't buy tickets in advance, but that was ok.  The line wasn't long.  The house was small so people moved in and out quickly.

2025爸爸節快樂 + Pancakes Recipe!

慶祝2025年八月八日父親節

自家製煎鬆餅

只有一匙糖

雖然另外添上草莓果醬和蜂蜜

不添也成

人老了不能吃太甜

這樣最健康

Dry Ingredients:

• 1 cup flour
• 1 tspn baking powder
• 1/2 tspn salt

Wet Ingredients:

• 2/3 cups + 2 tbspns milk
• 1 tbsp honey or brown sugar
• 1 egg
• 1 tbspn unsalted butter (melted)

Steps:

1. Combine all dry ingredients in a large bowl. 
2. Combine all wet ingredients in another large bowl. 
3. Add the wet ingredients into the dry-ingredient bowl. Combine well. 
4. Pan fry the pancakes.  When bubbles appear on the batter, flip the pancake over.
5. While waiting for pancakes to fry, make a cup of coffee.
6. Optional:  serve with strawberry jam and/or honey.
